Just Right for Singles (Or Anyone) With A Sweet Tooth

I searched and searched for the blog that talked about Cake Mix Cookies this week but I can't find it. Whoever you are, thank you for the wonderful idea.

As a single person, I don't often bake for myself. I can't eat a whole cake. I get sick of it after day 3. Even if I make just half of a cake mix, it is too much. Cookies, though, are much better. I can make up a batch of dough and freeze it taking out enough for 6 toaster oven cookies when the craving hits me. It takes time to make cookie dough and I have to have all of the ingredients handy.

This Cake Mix Cookie idea is great for me because cake mixes often go on sale for under a dollar and I can make up a batch with only 3 ingredients and still get almost home-baked taste. Actually, I think they taste like store bought bakery cookies.The ingredients are: 1 cake mix, 2 eggs, 1/2 cup oil. I only used half of the cake mix so I used 1 egg and 1/4 cup of oil. You can use any flavor cake mix. I am a chocoholic so of course I had a Devil's Food cake mix handy.

Mix well. I added chocolate chips to make them extra good.

Bake at 350 degrees for 10 minutes. (refrigerated dough takes a few minutes longer)

I baked 6 at a time in my toaster oven. Half of a cake mix made 14 cookies. Next I'm going to try lemon cake mix cookies. Finally, I can use up some old cake mixes and free up some precious pantry space.
