Finally Made the Lasagna

I think I bought those lasagna ingredients about two weeks ago. I kept meaning to make it but I always had something else that needed to be eaten first. The final straw was when I noticed the expiration date on the cottage cheese (I used it instead of Ricotta) said August 17. Oops, a little old. It was still ok. I forgot to take a picture of my finished masterpiece before I cut it up and put some in the fridge for lunches this week and some in the freezer for later.


I got a call from one of my college friends yesterday. We talked for an hour and caught up on each others' lives. I wish I had more time and money to go visit my friends. They have spread out all over the country. Well, I moved far away too. We were talking about other people's children who were 1 or 2 years old when we were in college. Now they are in high school. My own niece is going away to college this year. It makes me feel like I should have accomplished more in the last 15 years. Where did the time go?
