The Munchies Attack


One of the drawbacks to not having snack food in the house is that sometimes I want a snack that isn't particularly healthy and I can't find anything to satisfy the craving. Often I rely on popcorn but with my microwave out of service, no air popper and a bad experience the last time I tried to cook it on the stove top, I decided that wasn't an option. My other choices were baking something but that would take too long and I didn't want to turn on the oven. Chocolate chips are good but this late at night they keep me awake.

After opening and closing the cabinets and fridge many times, I settled on a cinnamon-sugar tortilla, warm and toasty from the pan. Mmmmm. That did it. It's cheap and easy to make and it kept me from running to the Quick Mart down the street for a over-priced candy bar.

In other news, I have been trying to track down my last out-standing medical bill. The insurance company says they have no record of it. The billing office says they sent it in. Today the billing office called the insurance office and they said they had no record of me! Wow. I am amazed at all the different ways this insurance company can mess up a claim. It is something new every time. I guess this bill is going to need some hand-holding too. Just when I thought I was finished with all this.
